It’s 2:30 in the morning in Frisco, Texas, and while you’re probably still asleep, 21-year-old Angela Henson is already turning on the oven. She kneads, bakes, and arranges trays. All before the rest of the world wakes up.
By 8 in the morning, when she opens the pastry cart on her home’s porch, there is already a line that began forming before dawn. Neighbors with lawn chairs, coffee in hand, waiting for sourdough bread, English muffins, or those oatmeal cream pies that everyone mentions first. Henson bakes about 85 loaves of bread and nearly 100 muffins every Saturday, and even so, everything sells out within hours.
What began as a pandemic hobby became Little Bit Bakery, thanks to a Texas law that allows her to sell from her own kitchen. But if you ask her customers why they arrive so early, the answer isn’t just the bread. They want to see her succeed.
